Baking tools for this recipe

Instructions

  1. Mix the marzipan with the powdered sugar, almond flour and flour, breaking it up with your fingers.
  2. Add the egg white and rose water and knead to a smooth, slightly sticky dough. Wrap and refrigerate 1 hour.
  3. Heat the oven to 350 F (175 C) and line a baking sheet with parchment.
  4. Roll the dough into 30 walnut-sized balls (about 17 g each) and place about 1 inch (2.5 cm) apart.
  5. Press three almond halves, points up, into the sides of each ball.
  6. Brush the tops with the yolk mixture, avoiding the almonds.
  7. Bake 14 to 16 minutes, until golden. Cool on a rack.

Tips

  • Use real marzipan with a high almond content; sugary marzipan spreads.
  • Chill the dough so the balls hold their shape.
  • They are best the next day, once chewy inside.
  • Good with coffee.
