Instructions
- Melt the ghee in a heavy pan over low heat. Add the besan and stir continuously.
- Roast on low heat for 20 to 25 minutes, stirring constantly, until the mixture loosens, turns a deeper golden color and smells nutty, with the raw flour smell gone.
- Remove from the heat and stir in half the pistachios. Cool about 10 minutes until warm to the touch, not hot.
- Mix in the powdered sugar and cardamom until evenly combined.
- While still warm, scoop about 2 tablespoons and press and roll between your palms into a ball. If the mixture crumbles, add a teaspoon of warm ghee.
- Press a few pistachio pieces on top. Let set at room temperature for 30 minutes.
Tips
- Constant stirring and low heat prevent scorching; burnt besan tastes bitter.
- Add the sugar only after the mixture has cooled slightly so it does not melt.
- Work while the mixture is still warm or it will not hold a shape.
- Good with masala chai.
