Instructions

  1. Make the frozen cream first: spread 120 ml cream in a thin layer on a parchment-lined small tray and freeze until hard, at least 3 hours. Break into small pieces.
  2. Grind the saffron with a pinch of salt to a fine powder and stir into the rose water. Let it bloom 20 minutes.
  3. Whisk the cornstarch into 80 ml of the milk until smooth. Heat the remaining milk and the sugar until it boils.
  4. Whisk in the cornstarch mixture and simmer, stirring, 2 minutes until slightly thickened. Cool over an ice bath.
  5. Stir in the cold cream, saffron rose water and vanilla. Chill at least 4 hours or overnight.
  6. Churn in an ice cream maker per its directions. Add the pistachios and frozen cream pieces in the last minute of churning.
  7. Transfer to a freezer container and freeze at least 3 hours. Soften 5 minutes before scooping.

Tips

  • Go easy on rose water; it can overwhelm saffron.
  • Use real saffron threads and let them bloom.
  • Good with faloodeh.
