Baking tools for this recipe

Instructions

  1. Stir the yeast and sugar into the warm water and rest 5 minutes. Add the flour and salt and mix, adding water by the spoonful if needed, to a soft, slightly sticky dough.
  2. Knead 8 to 10 minutes, cover and let rise 1 to 2 hours until doubled.
  3. Heat 2 inches (5 cm) of oil in a wide pan to 350 F (175 C).
  4. With oiled hands, take a golf-ball-sized piece, press a hole in the center and stretch into a ring about 4 inches (10 cm) wide.
  5. Fry 2 to 3 minutes per side, turning once, until deep golden.
  6. Drain briefly and toss in the sugar while hot. Serve warm.

Tips

  • Keep the oil at 350 F; the dough should puff and brown evenly.
  • Oil your hands well; the dough is sticky.
  • Serve with a drizzle of honey for a sweeter version.
  • Hot-oil frying: keep oil at 350 F (175 C) and never leave it unattended.
