Instructions

  1. Filling: soak the mung beans 2 hours, drain, and steam 20 minutes until very soft. Mash hot, then cook in a nonstick pan with the sugar, oil and salt, stirring, until a thick paste forms. Cool and roll into 15 balls of about 20 g.
  2. Water dough: mix the flour, powdered sugar and salt, rub in the butter, then add the hot water and knead until smooth. Rest 20 minutes.
  3. Oil dough: stir the flour and oil to a soft paste.
  4. Divide each dough into 15 equal pieces. Flatten a water-dough piece, wrap it around an oil-dough piece, roll out thin, roll up like a cigar, then roll flat again and roll up. Rest 10 minutes.
  5. Flatten each roll, wrap it around a filling ball and seal, forming a small round.
  6. Heat the oven to 375 F (190 C). Place seam side down on a lined sheet, brush with the yolk and milk and bake about 25 minutes, until golden.

Tips

  • Rolling the dough thin and up twice creates the flaky layers.
  • The paste should hold its shape, not be wet.
  • Rest the dough to relax gluten so it rolls thin.
  • Good with tea or coffee.
