Baking tools for this recipe

Instructions

  1. Mix the flour, yeast, sugar and salt. Add the yogurt, warm water and olive oil and knead 8 minutes into a smooth, soft dough. Cover and rest 30 minutes.
  2. Mix the walnuts, sugar and cinnamon for the filling.
  3. Heat the oven to 375 F (190 C) and line a baking sheet with parchment.
  4. Divide the dough into 4 pieces. Roll one into a thin 10 x 14 inch (25 x 35 cm) rectangle, keeping the others covered.
  5. Brush with melted butter, scatter a quarter of the filling and roll up tightly from the long side.
  6. Cut the roll into 4 pieces about 2 1/2 inches (6 cm) wide and set them cut side up on the sheet. Repeat with the rest.
  7. Brush the tops with the remaining butter and bake 25 to 30 minutes, until golden brown.

Tips

  • Roll the dough as thin as you can without tearing for the most spirals.
  • Keep the roll snug so the filling stays inside.
  • Raisins soaked in hot water can be added to the filling.
  • Good with turkish tea.
