Baking tools for this recipe

Instructions

  1. Knead the flour, yeast, sour cream and butter 5 minutes until smooth and elastic. Shape into a ball, wrap and refrigerate 5 hours or overnight.
  2. Take the dough out 1 hour before rolling. Mix all the filling ingredients to a thick, spreadable paste.
  3. Heat the oven to 350 F (175 C) and line a baking sheet with parchment.
  4. Roll the dough on a floured surface into a 20 x 14 inch (50 x 36 cm) rectangle.
  5. Spread the filling evenly over the dough, leaving a thin edge.
  6. Roll up tightly from the long side into a log, seam side down, and cut into 16 slices about 1 inch (2.5 cm) wide.
  7. Place cut side up on the sheet, brush with egg yolk and bake 30 to 35 minutes, until deep golden.

Tips

  • Warm but not melting butter keeps the filling spreadable.
  • Cold dough rolls out much more easily.
  • Leave space between the pieces: they puff as they bake.
  • Good with strong coffee.
