Instructions
- Whisk the agar into the water in a saucepan and let it soak for 10 minutes.
- Bring to a simmer over medium heat, whisking, and cook 2 minutes until the agar is fully dissolved.
- Add the almond milk and sugar and heat until steaming, stirring until the sugar dissolves. Do not boil hard. Stir in the almond extract.
- Pour into an 8-inch (20 cm) square pan rinsed with water. Skim any foam and cool 20 minutes, then refrigerate at least 2 hours until firm.
- Meanwhile simmer the syrup water, sugar and osmanthus for 3 minutes. Cool and chill.
- Cut the set jelly into diamonds or cubes with a wet knife, and serve in chilled bowls with the syrup and finely chopped fruit.
Tips
- Agar sets at room temperature, so work fast once you pour.
- Traditional versions use ground apricot kernels; almond extract gives the same fragrance simply.
- Gelatin gives a softer set but is not vegan.
- Good with jasmine tea.
