Instructions
- Toast the whole almonds in a dry skillet over medium heat for 5-7 minutes, stirring frequently until fragrant and golden. Let cool and finely chop.
- Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife.
- In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, skim milk powder, sea salt, vanilla seeds, and pod. Heat over medium heat, stirring until sugar dissolves and the mixture is hot but not boiling (about 170-175°F/77-79°C).
- Remove from heat and discard the vanilla pod. Stir in the toasted chopped almonds and almond syrup or extract.
- Cover the mixture and refrigerate until completely chilled, at least 60 minutes.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, about 20-30 minutes.
- Transfer gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
