Instructions

  1. Toast the almonds at 325 F (160 C) for 10 minutes and cool; keep them slightly warm.
  2. Dissolve the sugar in the water over medium heat and boil to 230 F (110 C). Keep the syrup warm over very low heat.
  3. Put the warm almonds in a wide, shallow pan or large bowl. Add 1 tablespoon of syrup and stir and shake constantly for 2 to 3 minutes until the almonds are dry and no longer sticky.
  4. Repeat, adding syrup 1 tablespoon at a time, tossing until dry between additions; dust with a pinch of cornstarch if they clump. Repeat about 20 times until a thick, smooth coat builds up.
  5. Spread on parchment and leave to dry fully overnight.

Tips

  • Never add the next coat until the last is dry.
  • Work in a cool, low-humidity room.
  • Add food coloring or flavor to the final coats if desired.
  • Boiling sugar syrup at 230 F (110 C) causes severe burns; handle with care.
