Instructions

- Gradually add the softened butter in tablespoons, allowing each to incorporate fully before adding the next. Continue kneading until the dough is shiny, elastic, and pulls away from the bowl, about 10-15 minutes total.
- Transfer the dough to a lightly oiled bowl, cover tightly with plastic wrap, and let it proof at room temperature until doubled in size, about 90 minutes.
- Press the dough gently to deflate and chill it, covered, until firm, about 3 hours or overnight.
- Divide the dough into 12 equal portions (about 90 g each). Flatten each piece and spread about 1 tablespoon of almond cream in the center, then fold the dough over to enclose the filling and shape into smooth buns.
- Place the filled buns on a parchment-lined baking sheet or into a loaf pan, spacing them evenly.
- Cover loosely and let the buns proof at room temperature until puffed, about 45-60 minutes.
- Preheat the oven to 375°F (190°C).
- Whisk the large egg with a tablespoon of water and brush the tops of the buns evenly. Bake for 18-20 minutes, or until golden brown and cooked through.
- Remove from oven and cool on a wire rack before serving.
