Instructions

  1. Rub the cold butter into the flour, sugar, baking powder, cinnamon and salt until crumbly. Add the egg and yolk and knead briefly to a smooth dough. Wrap and chill 1 hour.
  2. Mix the jam, almond flour and chocolate. Chill until needed.
  3. Heat the oven to 350 F (175 C). Butter eight 3-inch (7.5 cm) tartlet molds or muffin cups.
  4. Roll the dough 1/4 inch (6 mm) thick. Cut eight 4-inch (10 cm) rounds for the bases and eight 3-inch (7.5 cm) rounds for the lids, re-rolling scraps.
  5. Press a larger round into each mold, fill with about 1 1/2 tablespoons of filling, cover with a lid and pinch the edges to seal.
  6. Bake 20 minutes, until lightly golden. Cool 10 minutes, then unmold and dust with powdered sugar.

Tips

  • Don't overfill or the jam bubbles out.
  • Thick jam works best; reduce a thin one on the stove.
  • Substitute plum or sour cherry jam if grape is unavailable.
  • Good with coffee or sweet wine.
