Bavarian cream

A cold dessert cream made from vanilla custard set with gelatin and lightened with whipped cream, also known by its French name, bavarois.

Also called: bavarois

A stirred custard such as crème anglaise is cooked, gelatin is dissolved in it, and the mixture is cooled until it starts to thicken. Whipped cream is then folded in, and the cream is poured into a mold, a cake ring or a charlotte lined with ladyfingers and chilled until set.

In American bakeries, Bavarian cream often means a thick vanilla custard filling for doughnuts and cream puffs, closer to pastry cream than the classic molded dessert.
