Rubber spatula

A flexible, flat-bladed tool, today usually made of silicone, used to scrape bowls clean, fold mixtures gently and stir on the stove.

  • Equipment, utensils and bakeware

Also called: silicone spatula

The soft edge bends to the curve of a bowl, so almost no batter is left behind. It is also the classic tool for folding whipped egg whites or cream into a heavier base, cutting down through the center and sweeping up the side to keep the air in.

Silicone spatulas handle heat well, which makes them useful for stirring curds, custards and melted chocolate. Older rubber ones can melt on a hot pan, so they are best kept for mixing and scraping.
