Instructions

  1. Whisk the cornstarch with 1/4 cup of the oat milk until completely smooth.
  2. Warm the coconut cream, the remaining oat milk, the sugar, salt, and vanilla in a saucepan over medium heat, stirring, until the sugar dissolves and the mixture steams, about 5 minutes.
  3. Whisk in the cornstarch slurry and cook, stirring constantly, until the base thickens enough to coat the back of a spoon, 2 to 3 minutes.
  4. Strain into a clean bowl, press plastic wrap onto the surface, and chill until cold, at least 4 hours or overnight. Churn in an ice cream maker according to the manufacturer's directions until thick.
  5. Swirl the mashed raspberries through the churned ice cream as you spoon it into a freezer container, then freeze for at least 4 hours, until firm enough to scoop.
