  1. Put the chopped milk chocolate in a heatproof bowl.
  2. Heat the cream and corn syrup in a small saucepan over medium heat until steaming with small bubbles at the edges; don't let it boil.
  3. Pour the hot cream over the chocolate and let it stand for 2 minutes.
  4. Whisk gently until smooth and glossy, then whisk in the salt and vanilla.
  5. Use warm, or cool and refrigerate.
