  • 1.0 cup (240.0 ml)water
  • ½ cup (100.0 g)granulated sugar
  • ½ cup (107.0 g)dark brown sugar, packed
  • ¼ tsp (0.7 g)ground cinnamon
  • ⅛ tsp (0.3 g)ground nutmeg
  • pinch of ground cloves
  • 1.0 tsp (5.0 ml)pure vanilla extract
  • pinch of fine sea salt

Instructions

  1. Combine the chestnuts, water, both sugars, cinnamon, nutmeg, cloves and salt in a small saucepan.
  2. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Simmer gently, stirring now and then, for 12 minutes.
  4. Remove from the heat and steep for 15 minutes.
  5. Strain through a fine-mesh sieve, pressing on the chestnuts.
  6. Stir in the vanilla, cool and refrigerate in a clean bottle.

Tips

  • Mash a tablespoon of the strained chestnuts into the warm syrup before straining for a fuller, nuttier body.
  • Ground spices settle in the bottle, so give it a shake before each use.
