Instructions
- Heat the oven to 250°F (120°C). Spread the chopped white chocolate in a dry 8-inch square baking dish.
- Bake for 10 minutes, then stir and smear it across the dish with a silicone spatula.
- Keep baking, stirring every 10 minutes, until it turns the golden color of peanut butter and smells toasty, 40 to 60 minutes; if it turns chalky, keep stirring and it will smooth out.
- Near the end, warm the milk and sugar in a small saucepan, stirring, until the sugar dissolves and the milk steams.
- Gradually whisk the hot milk into the toasted chocolate until smooth, then whisk in the salt and vanilla.
- Strain if any bits remain, cool and refrigerate in a clean bottle.
Tips
- White chocolate chips often contain stabilizers and won't caramelize evenly; use bars.
- Toasting can be done days ahead: cool the toasted chocolate, break it up and store it airtight.
