Instructions
- Dissolve the espresso powder in the warm water.
- In a stand mixer bowl, whisk the confectioners' sugar and meringue powder.
- Add the espresso water and vanilla. Beat with the paddle on low speed until the icing is matte and holds stiff peaks, 7 to 10 minutes.
- For outlining, use it as is or add water 1/2 teaspoon at a time until it holds a soft peak. For flooding, thin a portion until a ribbon drizzled on the surface disappears in about 10 to 15 seconds.
- Keep the surface covered with plastic wrap or a damp towel while you work so it doesn't crust.
- Let decorated cookies dry uncovered at room temperature until completely hard, at least 8 hours or overnight.
