  • 6.0 tbsp (90.0 ml)warm water, plus more as needed

Instructions

  1. In a stand mixer bowl, whisk the confectioners' sugar and meringue powder.
  2. Add the water, coconut extract, and vanilla. Beat with the paddle on low speed until the icing is matte and holds stiff peaks, 7 to 10 minutes.
  3. For outlining, use it as is or add water 1/2 teaspoon at a time until it holds a soft peak. For flooding, thin a portion until a ribbon drizzled on the surface disappears in about 10 to 15 seconds.
  4. Keep the surface covered with plastic wrap or a damp towel while you work so it doesn't crust.
  5. Let decorated cookies dry uncovered at room temperature until completely hard, at least 8 hours or overnight.
