Vanilla & Extracts bean→tsp

Vanilla Bean-to-Extract Substitution Calculator

How much extract equals one vanilla bean? Swap between beans, single and double-fold extract, vanilla bean paste, vanilla powder and vanilla sugar, with advice on which to use where.

How to use it

  1. Enter the amount the recipe calls for and the form it uses.
  2. Choose plump Grade A beans or smaller Grade B beans.
  3. Use any equivalent in the table; the advice shows which suits your recipe.

How it works

A plump vanilla bean flavors about as much as 1 tablespoon of single-fold extract, a smaller Grade B bean about 2 teaspoons. Vanilla bean paste and pure vanilla powder swap one for one with extract, double-fold extract goes twice as far, and an 8 g packet of vanilla sugar is about a teaspoon.

Assumptions and limits

  • Bean flavor varies by size, origin and freshness.
  • Equivalents are for flavor; paste and beans also add visible seeds.

Tips

  • Use beans or paste where you'll see the seeds: custards, ice cream, frosting.
  • Use extract in cakes and cookies; the flavor survives baking.
  • Add extract off the heat; boiling drives off flavor.
