  • ⅛ tspfine sea salt
  • 1.0 tbsporange zest, finely grated
  • 1.0 tsp (5.0 ml)VanillaGoods pure vanilla extract

Instructions

  1. Put the chocolate in a heatproof bowl.
  2. Heat the cream with the orange zest until it just simmers, then let steep off the heat for 10 minutes and bring back to a simmer.
  3. Pour the hot cream over the chocolate through a fine-mesh sieve and let stand for 3 minutes. Stir gently from the center out until smooth and glossy.
  4. Stir in the salt and vanilla.
  5. Cover and refrigerate until firm enough to scoop, about 2 hours.
  6. Scoop into 2-teaspoon portions and roll quickly between your palms into balls. If they get sticky, chill for 10 minutes.
  7. Roll in the cocoa powder to coat.
