Instructions
- In a large bowl, beat the coconut cream with half of the confectioners' sugar until completely smooth, about 1 minute.
- In a chilled bowl, whip the cold cream, remaining confectioners' sugar, salt, and vanilla on medium-high speed to stiff peaks, 2 to 3 minutes.
- Fold about a third of the whipped cream into the coconut cream mixture to loosen it, then fold in the rest until smooth.
- Refrigerate for 30 minutes to firm up. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.
Tips
- Chill the bowl and beaters for 10 minutes first; cold cream whips faster and holds its shape longer.
- Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
- Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
- Storage: Refrigerate the filling for up to 2 days. Keep filled doughnuts refrigerated and serve within 4 hours.
