  • ½ cup (135.0 g)hazelnut paste, room temperature
  • ⅓ cup (40.0 g)confectioners' sugar, sifted
  • ½ tsp (2.5 ml)VanillaGoods pure vanilla extract

Instructions

  1. Line a 24-cup mini muffin pan with paper liners.
  2. Stir the hazelnut paste, confectioners' sugar, vanilla, and salt into a smooth, firm filling.
  3. Set aside a third of the chocolate. Melt the rest in a heatproof bowl over barely simmering water (or in 20-second microwave bursts), stirring, until it reaches 110°F.
  4. Remove from the heat and stir in the reserved chocolate until melted and the chocolate cools to 86 to 88°F. It's tempered when a streak on parchment sets glossy and firm within 5 minutes.
  5. Spoon 1 teaspoon chocolate into each liner and tap the pan so it covers the bottom and a little way up the sides. Refrigerate for 10 minutes.
  6. Roll the filling into 24 small balls, flatten each slightly, and press into the cups.
  7. Top each with about 1 teaspoon chocolate to seal, tap the pan, and let set until firm, about 1 hour.
