Instructions
- Toast the almonds in a dry skillet over medium heat, stirring often, until golden, 4 to 5 minutes.
- Combine the toasted almonds, water and sugar in a small saucepan and bring to a simmer over medium heat, stirring until the sugar dissolves.
- Simmer gently for 5 minutes.
- Remove from the heat, cover and steep for 30 minutes.
- Strain through a fine-mesh sieve, pressing on the almonds; discard them or save them for granola.
- Stir in the almond extract, vanilla and salt, cool and refrigerate in a clean bottle.
