Kitchen words

Tablespoon (tbsp): the bigger measuring spoon.

Teaspoon (tsp): the smaller measuring spoon.

Milliliter (mL): a small unit for measuring liquids.

Gram (g): a small unit of weight. You measure grams on a kitchen scale.

Cups, spoons and milliliters

1 cup = 16 tbsp = 48 tsp = about 240 mL

3/4 cup = 12 tbsp = 36 tsp = about 180 mL

2/3 cup = 10 tbsp + 2 tsp = 32 tsp = about 160 mL

1/2 cup = 8 tbsp = 24 tsp = about 120 mL

1/3 cup = 5 tbsp + 1 tsp = 16 tsp = about 80 mL

1/4 cup = 4 tbsp = 12 tsp = about 60 mL

1 tbsp = 3 tsp = about 15 mL

1 tsp = about 5 mL

What 1 cup weighs

All-purpose flour: about 120 g

Granulated sugar (plain white sugar): about 200 g

Packed brown sugar (pressed down into the cup): about 220 g

Butter: 227 g

The spoon-and-level rule

Wash your hands first. No tasting raw flour, dough or batter. Raw flour can carry germs that make you sick.

1. Stir the flour in its bag or jar to fluff it up.

2. Spoon flour into the cup until it heaps over the top.

3. Slide the straight back of a butter knife across the top to level it. A butter knife is a table knife with a rounded tip. Level means make it flat.

Do not scoop with the cup, tap the cup or press the flour down. That packs in too much flour.

Brown sugar is different: you press it into the cup. That is why it is called packed.
