Instructions

  1. Whisk the cornstarch with 1/4 cup of the coconut cream until completely smooth.
  2. Warm the remaining coconut cream with the sugar, salt, and vanilla in a saucepan over medium heat until it steams, then remove from the heat and let it steep for 10 minutes.
  3. Stir the lavender into the warm cream, steep for 10 minutes, then strain it out.
  4. Return the pan to medium heat, whisk in the slurry, and cook, whisking constantly, until thick and glossy, 2 to 3 minutes.
  5. Strain into six ramekins and let cool, then cover and refrigerate for at least 4 hours, until set.
