Instructions

  1. Heat the oven to 350°F (175°C) and lightly grease two standard 6-cavity doughnut pans.
  2. Whisk the flour, sugar, baking powder, salt, and nutmeg together in a large bowl.
  3. Whisk the eggs, milk, melted butter, vanilla, and lemon zest until smooth. Pour the wet ingredients into the dry and fold just until combined. The batter should be thick and spoonable; stop mixing as soon as the dry streaks disappear.
  4. Pipe or spoon the batter into the pans, filling each cavity about three-quarters full.
  5. Bake for 14 to 17 minutes. The tops should spring back lightly and a tester should come out clean.
  6. Cool in the pans for 5 minutes, then turn the doughnuts onto a rack before glazing. The doughnuts should feel set enough to lift without tearing and should be just warm, not hot, before glazing.

Tips

  • Vanilla bean paste swaps 1:1 for the extract and adds visible vanilla seeds; for a whole bean, use the seeds of 1 bean in place of 2 teaspoons of extract.
  • Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
