Instructions
- Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream.
- Add 1/4 cup peanut brittle pieces and 1/2 tsp pure vanilla extract to the blender.
- Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending to keep some peanut brittle texture.
- Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
- Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream.
- Serve immediately with a wide straw and long spoon.
Tips
- Use fresh or store-bought peanut brittle for authentic flavor and crunchy texture. For a nut-free variant, omit peanut brittle and use toffee pieces instead.
