Instructions

  1. Add 1/2 cup whole milk and 2 cups vanilla ice cream to a blender.
  2. Add 2 tbsp cream cheese, 1/2 tsp pure vanilla extract, 1 tbsp fresh lemon juice, and 1/2 tsp lemon zest.
  3. Blend on low for 10 seconds, then on medium-high for 20–30 seconds until thick and smooth. Avoid overblending.
  4. Check consistency and add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  5. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream and 1 tbsp graham cracker crumbs.
