Instructions
- Warm the cream, milk, and vanilla in a saucepan over medium heat until it steams and small bubbles form at the edges, about 5 minutes. Don't let it boil.
- In a separate bowl, whisk the egg yolks with the sugar and salt until the mixture turns pale yellow and thickens slightly, about 2 minutes.
- Slowly pour about a cup of the hot cream into the yolks while whisking constantly, then pour everything back into the saucepan. Cook gently, stirring, until the custard thickens enough to coat the back of a spoon (170°F/77°C).
- Strain the custard through a fine sieve into a clean bowl, then chill until cold, at least 4 hours or overnight. Churn in an ice cream maker according to the manufacturer's directions until thick, with a soft-serve consistency.
- Swirl the mashed raspberries through the churned ice cream as you spoon it into a freezer container, then freeze for at least 4 hours, until firm enough to scoop.
Tips
- Pat berries completely dry before using so extra moisture doesn't bleed into the ice cream.
- Don't toss the scraped pods: tuck them into a jar of sugar for homemade vanilla sugar.
- No vanilla bean? Use 2 teaspoons pure vanilla extract, 1 tablespoon vanilla bean paste or 1 teaspoon vanilla powder instead. Add it where the recipe adds the seeds; if the bean is steeped in hot milk or cream, stir the swap in after cooking, off the heat.
- Choosing vanilla: Tahitian vanilla (floral, cherry, anise) suits this recipe best; Madagascar (rich, creamy, classic) is a great alternative, and any pure vanilla works.
