Instructions

  1. Put a small plate in the freezer.
  2. Stir the figs, sugar, lemon juice, and salt in a heavy saucepan and let stand for 15 minutes, until juicy.
  3. Bring to a boil over medium-high heat, stirring, then boil, stirring often and mashing the fruit, until thick and the jam reaches 220°F, 15 to 25 minutes.
  4. Test by spooning a little onto the cold plate: after 1 minute it should wrinkle when pushed. If not, boil 2 minutes more and test again.
  5. Stir in the vanilla, pour into clean jars, and cool.
