  • 4.0 oz (113.0 g)white chocolate, melted, for dipping
  • ½ cup (50.0 g)chocolate sandwich cookies, finely crushed

Instructions

  1. Put the chocolate in a heatproof bowl.
  2. Heat the cream until it just simmers.
  3. Pour the hot cream over the chocolate and let stand for 3 minutes. Stir gently from the center out until smooth and glossy.
  4. Stir in the salt and vanilla.
  5. Cover and refrigerate until firm enough to scoop, about 2 hours.
  6. Scoop into 2-teaspoon portions and roll quickly between your palms into balls. If they get sticky, chill for 10 minutes.
  7. Dip each truffle in the melted white chocolate, let the excess drip off, and set on parchment. Sprinkle with the chocolate sandwich cookies before the coating sets.
