Instructions
- In a medium saucepan, combine milk, 3/4 cup (150 g) sugar, cocoa powder, salt, and the seeds and pod of the vanilla bean.
- Heat over medium heat, stirring frequently, until sugar dissolves and mixture is hot but not boiling, about 5 minutes.
- In a separate bowl, whisk the egg yolks to lighten.
- Temper the yolks by gradually whisking in 1/2 cup (120 ml) of the hot cocoa mixture, then slowly whisk the yolk mixture back into the saucepan.
- Cook over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, until custard thickens and coats the back of the spoon, reaching 170-175°F (77-79°C), about 5 minutes.
- Remove from heat and strain the custard through a fine mesh sieve into a clean bowl, discarding the vanilla pod.
- Stir in the heavy cream and mashed bananas until smooth.
- Cover with plastic wrap, pressing directly onto the surface to prevent a skin, and refrigerate at least 2 hours or until thoroughly chilled.
- Churn the chilled mixture in an ice cream maker according to manufacturer’s instructions until it reaches soft-serve consistency, about 20 to 30 minutes.
- Transfer the ice cream into an airtight container and freeze for at least 2 hours to firm up before serving.
