Instructions

  1. Melt 2 oz (56 g) of white chocolate gently over a double boiler or in short bursts in the microwave, stirring until smooth.
  2. Add 1/2 cup (120 ml) coconut milk beverage and 2 cups (480 ml) vanilla ice cream to a blender.
  3. Pour in the melted white chocolate and 1/2 tsp pure vanilla extract.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream and 1 tsp white chocolate shavings.
  7. Serve immediately with a wide straw and long spoon.
