Instructions

  1. Split the vanilla bean lengthwise with a paring knife and scrape out the seeds with the back of the blade.
  2. Put the sugar in a bowl, add the seeds, and rub them in with your fingertips until evenly speckled.
  3. Spoon the sugar into a jar and bury the scraped pod in the middle.
  4. Seal and let it sit for at least 1 week, shaking now and then, so the pod perfumes the sugar.
  5. Use it anywhere you'd use sugar: in baking, coffee, tea, or sprinkled over fruit. Top the jar up with fresh sugar as you go.
