Instructions

  1. Melt white chocolate gently in a microwave or double boiler until smooth. Let cool slightly but still pourable.
  2. Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream.
  3. Pour melted white chocolate into the blender along with 1/3 cup crushed cookies and 1/2 tsp pure vanilla extract.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream and 1 tbsp crushed cookie crumbs.
