Instructions
- In a medium saucepan, combine the whole milk, heavy cream, and half of the granulated sugar. Heat over medium heat until the mixture is hot and just about to simmer, about 5-7 minutes.
- While the milk mixture heats, whisk the egg yolks with the remaining sugar and fine sea salt in a bowl until smooth and slightly thickened.
- Slowly pour about 1 cup (240 ml) of the hot milk mixture into the egg yolks while whisking constantly to temper the eggs.
- Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens enough to coat the back of the spoon and reaches 170-175°F (77-79°C), about 3-5 minutes. Do not let it boil.
- Remove the custard from heat and immediately stir in the pure vanilla extract and the peach puree.
- Pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Cover the surface with plastic wrap and refrigerate until completely chilled, at least 4 hours or overnight.
- Once chilled, churn the custard in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency, about 20-30 minutes.
- Transfer the ice cream to a freezer-safe container, cover tightly, and freeze for at least 4 hours to firm up before serving.
