Instructions

  1. Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream.
  2. Add 1/3 cup pumpkin purée, 1/2 teaspoon pumpkin pie spice, and 1/2 teaspoon vanilla extract.
  3. Blend on low for 10 seconds, then on medium-high for 20 to 30 seconds, just until thick and smooth. Avoid overblending.
  4. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  5. Pour into a chilled 16-ounce glass and top with 2 tablespoons whipped cream.
  6. Serve immediately with a wide straw and long spoon.

Tips

  • Use canned pumpkin purée, not pumpkin pie filling, for best flavor. To make ahead, blend ingredients and freeze in an airtight container; thaw slightly before serving for optimal texture.
