Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  3. In a large bowl, beat the softened butter with the brown sugar until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, beating well after each addition. Then mix in the vanilla extract, orange zest, and orange juice.
  5. Stir in the yogurt until smooth and combined.
  6. Gradually fold the dry ingredients into the wet ingredients just until no dry flour remains. Do not overmix.
  7. Gently fold in the toasted chopped pecans.
  8. Spread the batter evenly into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for about 55 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Tips

  • Toast pecans in a dry skillet over medium heat until fragrant to enhance their flavor.
  • Use fresh orange zest and juice for the best bright citrus flavor and balance with vanilla.
