  • ¼ cup (60.0 ml)orange juice, fresh squeezed
  • 2.0 tbsp (25.0 g)granulated sugar, for custard
  • 1.0 large (17.0 g)egg yolk
  • ½ tsp (2.5 ml)pure vanilla extract, for custard
  • 1.0 tbsp (8.0 g)powdered sugar, for dusting

Instructions

  1. In a small bowl, whisk together flour, baking powder, and sea salt; set aside.
  2. Prepare the orange-vanilla custard filling: In a small saucepan, heat the heavy cream, orange juice, orange zest (reserve 1 tbsp zest for batter), and 2 tbsp sugar over medium heat until just simmering.
  3. In a separate bowl, whisk the egg yolk and 1/2 tsp vanilla extract.
  4. Temper the egg yolk mixture by slowly whisking in about 1/4 cup of the warm cream mixture, then return all to the saucepan.
  5. Cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon (about 170-175°F / 77-79°C). Remove from heat, strain into a bowl, cover with plastic wrap touching the surface, and chill until cold, about 30 minutes.
  6. In a large bowl, beat the 3 eggs and 1/2 cup sugar with an electric mixer on high speed until pale, thick, and tripled in volume, about 5-6 minutes.
  7. Gently fold in the 1 tsp vanilla extract and reserved 1 tbsp orange zest into the foamed eggs.
  8. Sift the dry ingredients over the egg mixture and fold gently to combine without deflating.
  9. Gradually fold the melted and cooled butter into batter, maintaining as much air as possible.
  10. Cover batter and refrigerate at least 30 minutes to rest and firm up.
  11. Preheat oven to 375°F (190°C). Butter and flour a madeleine pan thoroughly.
  12. Fill molds halfway with the batter. Place about 1 tsp of the chilled orange custard filling into the center of each mold, then cover with a thin layer of batter to seal the filling.
  13. Bake for 12-15 minutes until the edges are golden and the classic hump is formed.
  14. Remove madeleines from pan immediately, transfer to a wire rack, and let cool.
  15. Dust with powdered sugar before serving.
