Instructions
- Whisk the confectioners' sugar and cornstarch. Grease a 9-by-13-inch pan and dust it generously with some of the mixture.
- Sprinkle the gelatin over 1/2 cup of the cold water in a stand mixer bowl and let bloom while you make the syrup.
- In a heavy saucepan, combine the sugar, corn syrup, maple syrup, salt, and remaining 1/2 cup water. Cover and cook over medium-high heat for 3 minutes, then uncover, clip on a candy thermometer, and boil without stirring to 240°F.
- With the mixer on low, slowly pour the hot syrup down the side of the bowl into the gelatin. Increase to high and whip until very thick, white, and just lukewarm, 12 to 15 minutes.
- Beat in the vanilla during the last minute.
- Scrape into the pan and smooth with a greased spatula. Dust the top with more sugar mixture and let stand uncovered until set, at least 4 hours or overnight.
- Turn out, cut into 1 1/2-inch squares with a greased knife, and toss in the remaining sugar mixture.
Tips
- Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
- Hot sugar causes serious burns; keep children and pets away from the stove while it cooks.
- Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
- Best vanilla for this: Madagascar (rich, creamy, classic), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
