Instructions

  1. Add the unsweetened coconut milk to a high-speed blender first.
  2. Add the frozen pineapple chunks, chopped apple, fresh lime juice, fine sea salt, and vanilla extract.
  3. Add the ice cubes.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds until completely smooth.
  5. Check consistency and blend in 1–2 tablespoons additional coconut milk if too thick, or a few extra ice cubes or frozen fruit if too thin.
  6. Pour into a 16-ounce glass and serve immediately.
