Instructions
- In a medium saucepan, combine brewed coffee, milk, heavy cream, and granulated sugar.
- Scrape the seeds from the vanilla bean and add both the seeds and the pod to the saucepan.
- Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling, about 5 minutes.
- Remove from heat and let it steep with the vanilla bean pod for 15 minutes to infuse the flavor.
- Remove and discard the vanilla bean pod, then stir in the fine sea salt.
- Allow the mixture to cool to room temperature, then transfer to a container and chill thoroughly in the refrigerator, about 1 hour.
- Once chilled, pour the mixture into popsicle molds, insert sticks, and freeze until solid, about 5 hours or overnight.
- To unmold, briefly run warm water over the outside of the molds and gently pull the popsicles out.
