Ingredients

Yield: about 1 quart (4 servings of generous scoops) | Time: 30 minutes active, 4–6 hours chilling, plus churning and freezing

       2 cups (480 ml) heavy cream

       1 cup (240 ml) whole milk

       ¾ cup (150 g) granulated sugar

       1 vanilla bean (Grade A Madagascar recommended for the cleanest flavor)

       6 large egg yolks

       1 teaspoon pure vanilla extract

       Pinch of fine sea salt

Why these specific quantities matter

       2:1 cream to milk ratio: creates a luxurious texture without being too dense. More cream gets richer; more milk gets icy. This ratio is the proven balance.

       ¾ cup sugar: less and the texture freezes hard; more and the ice cream becomes cloyingly sweet and harder to scoop. This is calibrated for the right freezing point.

       6 yolks: enough to give richness and creaminess without making the ice cream taste eggy. Some recipes use 8 yolks but in our testing, 6 hits the right balance for vanilla.

About ice cream makers: the bowl-style models (Cuisinart and similar) work great if you remember to freeze the bowl 24 hours ahead. Compressor models (Lello, Whynter, Breville) are pricier but produce slightly better texture. Either works for this recipe.

Step 1: Prepare the Vanilla Bean

This is the most critical step for visual appeal and flavor depth.

1.      Lay the vanilla bean flat on a cutting board.

2.      Using a sharp paring knife, slice lengthwise from end to end. You want to split the bean down its full length without cutting all the way through to the bottom side.

3.      Open the bean like a book. Hold one end flat against the cutting board.

4.      Using the dull (back) edge of the knife, scrape from one end to the other along the inside of the bean to extract the seeds. They'll come out as a thick, sticky black paste.

5.      Reserve both the seeds and the empty pod — both go into the recipe.

Pro tip: if the seeds clump together when scraped, pinch them between your fingers and rub them into the sugar in step 2. This disperses them so they don't form clumps in the finished ice cream.

Step 2: Steep the Vanilla in Cream

6.      In a heavy-bottomed saucepan, combine the heavy cream, whole milk, vanilla seeds, and the empty vanilla pod.

7.      Add half the sugar (⅓ cup, plus a generous tablespoon) and the salt. Reserve the rest of the sugar for the egg yolks.

8.      Place over medium-low heat and warm slowly, stirring occasionally to dissolve the sugar.

9.      Heat until the mixture is steaming but not boiling — small bubbles forming around the edges, lots of steam coming off, but no rolling bubbles. This usually takes 5–7 minutes.

10.   Remove from heat. Cover the saucepan with a lid and let the mixture steep for at least 30 minutes — longer is better. The vanilla seeds and pod release flavor compounds into the warm cream during this time.

Why steeping matters: in a quick recipe, you'd skip this step. But the difference is significant — 30 minutes of steeping pulls dramatically more flavor from the bean than just heating once and proceeding. If you have time, steep for an hour. Some chefs steep overnight in the refrigerator.

Step 3: Make the Custard Base

This is where most home ice cream makers worry about scrambled eggs. The technique is simple if you follow the steps.

11.   In a separate medium bowl, whisk the egg yolks with the remaining sugar (about ⅓ cup minus that tablespoon you used earlier). Whisk vigorously until the mixture is pale yellow and slightly thickened — about 90 seconds. The sugar should be mostly dissolved into the yolks.

12.   Reheat the cream mixture over medium-low heat until it's warm but not steaming heavily.

13.   Now temper the eggs: while whisking the yolk mixture continuously with one hand, slowly pour about 1 cup of the warm cream into the yolks in a thin stream. "Slowly" means over 20–30 seconds, not all at once. This raises the yolks' temperature gradually so they don't scramble.

14.   Once that first cup is incorporated, you can pour faster — add another cup of warm cream while whisking, then dump everything back into the saucepan with the rest of the cream.

Step 4: Cook to Nappe

"Cook to nappe" is the French term for cooking custard until it's thickened just enough to coat the back of a wooden spoon. This is the make-or-break step.

15.   Return the saucepan to medium-low heat.

16.   Stir constantly with a wooden spoon, scraping the bottom and corners of the pan. Use a figure-8 motion that touches every part of the pot.

17.   Cook until the custard thickens enough to coat the back of the spoon. When you draw a line across the back of the coated spoon with your finger, the line should hold and not run. If you have a thermometer, target 170–175°F (77–79°C). Don't go above 180°F or the eggs will start to scramble.

18.   This usually takes 5–8 minutes. Be patient — rushing the heat scrambles the eggs.

19.   As soon as the custard hits nappe, remove from heat immediately. Do not let it boil.

If your custard does scramble

Even experienced cooks occasionally push too hard. If you see small lumps forming, pour the custard immediately through a fine-mesh strainer into a clean bowl. Most lumps will be caught. If your custard is mostly smooth with just a few small lumps, the strained version is still usable and most people won't notice. If it's broken into obvious curds, start over — there's no fixing that.

Step 5: Strain and Cool

20.   Pour the cooked custard through a fine-mesh strainer into a clean bowl. The strainer catches the empty vanilla pod and any tiny cooked egg bits.

21.   Add the cooled empty vanilla pod back into the strained custard for additional flavor as it chills (you'll remove it before churning).

22.   Stir in the 1 teaspoon of pure vanilla extract.

23.   Place the bowl over an ice bath (a larger bowl filled with ice and a little water) and stir gently to cool quickly. About 10 minutes.

24.   Cover the bowl and refrigerate for at least 4 hours, ideally overnight. The custard must be thoroughly cold before churning — warm custard produces icy ice cream.

Why aging the custard matters: aging in the refrigerator overnight isn't just about temperature. The fat in the cream undergoes structural changes during chilling that improve the eventual texture of the ice cream. Some pastry chefs age their custard 24+ hours for this reason. If you have the time, do it.

Step 6: Churn

25.   Remove the empty vanilla pod from the chilled custard.

26.   Pour the cold custard into your ice cream maker.

27.   Churn according to the manufacturer's instructions — usually 20–30 minutes for bowl-style makers, slightly longer for compressor models.

28.   The ice cream is done when it has the texture of soft-serve and has roughly doubled in volume. It should hold its shape on a spoon but still be soft enough to scoop easily.

Step 7: Hardening

29.   Transfer the soft ice cream to a freezer-safe container with a tight-fitting lid.

30.   Press a piece of plastic wrap directly against the surface of the ice cream before sealing the lid. This prevents ice crystals from forming on top.

31.   Freeze for at least 2 hours before serving. 4 hours produces the ideal texture.

32.   Before serving, let the container sit at room temperature for 5 minutes to slightly soften.

Variations and Add-Ins

Single-origin variations

       Madagascar (Bourbon): the classic. Rich, creamy, high-vanillin profile.

       Tahitian: more floral, almost cherry-like. Spectacular and unusual.

Custard scrambled while cooking

Cause: heat too high. Solution: medium-low heat, never higher; constant stirring; remove from heat the moment the custard reaches nappe consistency.

Storage and Shelf Life

Properly stored, homemade ice cream lasts:

       In the freezer, sealed: 2–3 weeks at peak quality

       After that: still safe for months but quality declines (texture turns slightly icier)
